PURPOSE: To obtain a fibrous seasoned food suitable for a dusting powder, etc., and having a soft sense of eating without the smell of soybeans, by adjusting the moisture of the soybeans, grinding the adjusted soybeans, forming a fibrous materials from the ground soybeans, and seasoning the fibrous material with under heating and strirring.
CONSTITUTION: Soybeans are dipped in water to give 30W60wt% moisture content, and the resultant soybeans are heated by steaming in a short time, etc. to inactivate the enzymic activity. The resultant soybeans are then ground in a colloid mill to form a fibrous material, which is seasoned with a seasoning under heating and stirring in a steam-jacketed vessel equipped with a stirrer to give the aimed fibrous seasoned food with about ≤30wt% moisture. A bonito extract, meat extract, whole egg liquid, cheese powder, yeast extract, sodium glutamate, purified beef tallow, etc. may be used as the seasoning for seasoning the fibrous material.
