Abstract:
PURPOSE:To prepare fish boiled with soy of good quality, by boiling fish meat which is immersed in a seasoning, e.g. soy sauce, miso, or tomato sauce, in a closed container. CONSTITUTION:Fish meat which is precooled or frozen in a closed container having freeze and heat resistance, in immersed in a precooled seasoning comprising soy sauce, broth, sugar, sodium glutamate, or a ginger, to extract proteins. The surfaces of the fish meat are thus coated with actomyosin films. The meat is then rapidly frozen to form colloidal glazes and stored for a long time. The stored meat in an closed container is heated wholly and boiled in the seasoning containing drips formed by thawing and extracts due to the heat coagulation, as soy.
