Abstract:
PURPOSE:To prepare uniform dough composed mainly of wheat flour, easily without using ripening process, by kneading the raw material with water under reduced pressure, and extruding the mixture in the form of a web under the lowest possible extrusion pressure. CONSTITUTION:The pressure in the closed kneading vessel 2 is decreased below the atmospheric pressure by the air suction device 10, and raw wheat flour and water are supplied to the vessel 2 and kneaded. The kneaded product is extruded through the die 14 in the form of the noodle web 31 under an extrusion pressure controlled as low as possible by the control of the rate of revolution of the variable-speed motor 22. The obtained noodle web 31 is rolled to the desired thickness by the second rolls 15, 16, and slit in the form of noodle strips.
