Abstract:

PURPOSE: To obtain an adhesive for producing a formed food such as formed fish and shellfish, formed meat, formed vegetable and formed fruit from a food such as animal meat, fish and shellfish, vegetable and fruit, containing transglutaminase, protein powder, pulverized silicon dioxide as active ingredients.
CONSTITUTION: This adhesive contains preferably 20-100 unit (based on 1g of the adhesive for food) transglutaminase preferably not dependent upon calcium, preferably 70% of protein powder (preferably lactoprotein such as powdered milk, casein, sodium caseinate or calcium caseinate) and preferably 1-3% of pulverized silicon dioxide having preferably 2-5μm particle diameter as active ingredients.
