Abstract:

To provide an agent for inhibiting the deterioration of a flavor and a taste mainly due to light, heat, oxygen or the like without affecting the original flavor and taste of a food or the like.

This agent for inhibiting the deterioration of a flavor and a taste contains at least one solvent extract of a natural material selected from the group consisting of Eucalyptus globulus Labill., Eugenia caryophyllata Thunb., Terminalia chebula Retz., Fragaria grandiflora Ehrh, Cornus officinalis Sieb. et Zucc., Geranium thunbergii Sieb. et Zucc., Punica granatum L., Trapa japonica Flerov., Mallotus japonicus Muell. Arg., and Galla Rhois.
