Abstract:
PROBLEM TO BE SOLVED: To provide an alcohol fermentative yeast having heat resistance, and an ethanol production method using the same.SOLUTION: An ethanol production is performed by using Pichia Kudriavzevii (accession number NITE P-1055) having heat resistance which can ferment ethanol by a yield of 80% or more at each temperature within a range of a fermentation temperature 40-43°C.
