Abstract:
PURPOSE: To obtain alcohol-free low calorie wine maintaining the flavor and aroma of wine by mixing wine freed of alcohol with concd. grape juice. CONSTITUTION: An alcohol-free liq. phase obtd. by removing alcohol into a vapor phase is mixed as a base with concd. grape juice to obtain the objective product. This product is preferably obtd. from table wine contg. <=0.1 g/100 l hydromethylfurfural. It is produced, e.g. as follows; aged Californian white Chablis wine is diluted with demineralized water and fed into a centrifugal film evaporator to evaporate alcohol, the resultant alcohol-free wine is mixed with concd. white grape fruit juice and demineralized water, citric acid and sulfurous acid as a preservative are successively added and then gaseous CO2 is introduced to make soda.
