Abstract:

PROBLEM TO BE SOLVED: To provide an image analysis method for three-dimensionally visualizing the tissue structure of multicomponent dispersion family food.
SOLUTION: After the multicomponent dispersion family food containing starch, protein, lipid, and like is dyed by fluorescent coloring matters, the tissue structure of the starch, protein, and lipid can be analyzed as a three-dimensional image by observation in a region having lower wavelength than -40 nm being the maximum absorption wavelength of the fluorescent coloring matters.
