Abstract:

To collect anti-freezing proteins from an easily available fish to promote the utilization of the anti-freezing proteins.

Eleven kinds of anti-freezing proteins are obtained from Zoarces elongatus Kner and Brachyopsis rostratus (Tilesius) which are waste fishes among fishes living in Japan, water areas near to Japan, and water areas in the same climatic areas as the water areas near to Japan. Their amino acid sequences and base sequences. A method for producing the anti-freezing protein in a large amount by a genetic engineering method using an obtained gene. A freeze-concentration inhibitor and freezing point-lowering agent contains the anti-freezing proteins as active ingredients.
