Abstract:

PURPOSE: To provide the titled composition containing a specific substance derived from the reaction product of an amino acid and a sugar as a main component.

CONSTITUTION: An amino acid (e.g. aspartic acid, glutamic acid, lysine, cystine, glycine, alanine, etc.) is made to react with a sugar (e.g. glucose, xylose, ribose, lactose, etc.) by heating the aqueous solution of the above components under nearly neutral pH condition at about 100°C for a long period to cause the sufficient browning of the solution. A substance having a molecular weight of ≥1,000, preferably ≥5,000 is separated from the reaction product by membrane filtration method and dialysis. The objective antimutagenic composition can be produced by using the substance as a main component. The composition has extremely high antimutagenic effect against melanoidin which is a dehydrative condensation product having a molecular weight of ≥1,000, especially ≥5,000. A tasty food can be produced by using the above antimutagenic substance as a component.
