Abstract:
PROBLEM TO BE SOLVED: To provide an antioxidizing agent containing a ginger oil which has stronger effects in masking unpleasant odors and preventing a peroxide value from rising than a ginger oil produced by a steam distillation method.SOLUTION: The antioxidizing agent for fat or complex lipid contains a ginger oil having at least one peak detected within 5 minutes before the peak of neral, and at least three peaks detected within 7 minutes after the peak of geranial when subjected to high speed liquid chromatography analysis under the following conditions. The sample is ethanol column containing 0.1% (w/v) of the ginger oil, the column is an ODS column having a particle size of 5 μm, an inner diameter of 4.6 mm and a length of 250 mm, the column oven temperature is 40°C, the detecting wave length is 228 nm, the mobile phases are water (A liquid) and acetonitrile (B liquid), and the flow rate is 1 mL/min. In the gradient program, the initial condition (1) is 70% of A liquid and 30% of B liquid, the ratio is varied linearly to 10% of A liquid and 90% of B liquid from the initial condition for 0 minute to 20 minutes (2), and the ratio is maintained at 10% of A liquid and 90% of B liquid for 20 minutes to 40 minutes (3).
