PURPOSE: To prepare ice cream preventing the excessive softening of the cream, by using a controlling means to gradually harden the ice cream when the cooling of the cream is repeated without dispensing the ice cream and gradually soften its hardness when the ice cream is dispensed.

CONSTITUTION: An output controlling device 39 continues the transmission of operation signal when an operation signal is transmitted from the output controlling device 39 by the order of a timer 38 or the order transmitted by the operation of a cup switch 15 and when the output torque calculated by an arithmetic unit 36 is smaller than the torque stored in a torque memory 42. When the calculated output torque becomes higher than the torque stored in the torque memory 42, a signal is transmitted from a comparator 37 to the output controlling device 39 and the operation of the apparatus is stopped by the signal transmitted from the output controlling device.
