PURPOSE: To obtain the subject apparatus capable of producing products of good quality, since a raw material can be homogeneously hydrated in a short hydration time by constructing the apparatus so as to hydrate the raw material with a specific high-speed stirring type hydrator and then steam the hydrated raw material in a steamer.
CONSTITUTION: A raw material is initially fed to a high-speed stirring type hydrator 3 equipped with a horizontally rotating disklike rotating plate 16 having pins 17 on its top surface and, together with water from a water storage tank 8, scattered on the outer peripheral part of the body 4 of the hydrator 3 by action of the rotating plate 16. Thereby, the raw material is hydrated and then introduced from a raw material discharge port 21 of the hydrator 3 into a raw material inlet 30 communicating with the discharge port 21 with a raw material introducing device 29 provided in the raw material inlet 30 of a steamer 26. The raw material is subsequently steamed while being transferred in the steaming pipe 27 of the steamer 26 with a heating medium and a gas stream of the aforementioned medium and then discharged from a raw material discharge port 32 with a raw material discharge device 33 installed in the raw material discharge port 32.
