Abstract:

PROBLEM TO BE SOLVED: To obtain a baked food with nice-smelling flavor and crisp, favorably smooth palate feeling, uniform and favorable in heatability even if abundantly containing stocks of high water holding ability, by preliminarily drying a specific kind of oil-and-fat and proteins followed by incorporation of wheat flour and dietary fibers.
SOLUTION: A kind of oil-and-fat of the formula (R1 to R3 are each H or a hydrocarbon; where R1 and R2 each is of 0-2C, R3 is of 14-20C) is preliminarily mixed with proteins followed by mixing wheat flour and dietary fibers together, thus obtaining the objective baked food whose proteins and dietary fibers are coated with the oil-and-fat dispersed in the wheat flour dough, with favorable thoroughly baking finish without developing any oil scorching and oil segregation during baking process.
