Abstract:
PURPOSE: To provide the baked product which has a preservable property without degrading palatability in spite of heating with microwaves by mixing chemically reformed starches, exclusive of the reformed starches subjected merely to cross-linking, at an effective ratio into a compd. CONSTITUTION: This baked product is obtd. by mixing the chemically reformed starches, such as acetylted, hydroxypropylated, succinylated and propylated starches, exclusive of the reformed starches subjected merely to the cross-linking, at the effective ratio which is preferably 5 to 30% in the per cent of bread producers into the compd. composed of bread flour, corn flour, wheat flour, etc., as main raw materials.
