Abstract:

PROBLEM TO BE SOLVED: To easily adjust the texture of bread dough without changing the compounding components by adjusting the texture immediately before baking the dough with microwave irradiation.
SOLUTION: Texture of bread dough is adjusted immediately before baking the dough by the irradiation of microwave (preferably microwave having a frequency range of 300-3,000 MHz). The adjustment of the texture can be carried out by drawing the dough between a pair of front and back belt conveyors in a non-pressurized state by differentiating the speeds of both belt conveyors or using a pair of front and back belt conveyors having height difference and differentiating the speeds of both belt conveyors. The bread dough preparation apparatus A may be provided with a microwave radiation part 1 having a belt conveyor C1 and a front belt conveyor C2 having a speed lower than that of the belt conveyor C1 and placed immediately before the microwave radiation part 1.
