Abstract:

PURPOSE: To obtain the title batter liquid, containing liquid fats and oils and heat-setting raw material and emulsified into an oil-in-water type, having crispy and simultaneous soft texture in frying and useful as a coating liquid in frying materials in oil.

CONSTITUTION: The aimed batter liquid obtained by containing about 20W50wt.% liquid fats and oils and heat-setting raw material and emulsifying the above-mentioned oil and fat and raw material into an oil-in-water type. Furthermore, the heat-setting raw material means a raw material capable of changing physical properties, such as coagulating or increasing viscosity by heating, and, e.g., whole egg or wheat flour, is preferably used.
