Abstract:
To provide a beer-like carbonated beverage which is weakly bitter and provides a crisp finish after a flavor, and a production method thereof.SOLUTION: In a beer-like carbonated beverage, [phenylacetaldehyde content]/[furfural content] is 0.42 or more, and the bitterness is equal to or less than that of the iso-α acid aqueous solution at 5 mg/L. In a production method of a beer-like carbonated beverage whose bitterness is equal to or less than that of the iso-α acid aqueous solution at 5 mg/L, the phenylacetaldehyde content and the furfural content are adjusted such that [phenylacetaldehyde content]/[furfural content] is 0.42 or more.SELECTED DRAWING: None
