To provide a -glucan product, a simple and efficient method of extracting -glucan, or at least a substitute useful for public.
The present invention discloses a method of obtaining the -glucan from a cereal by extraction with water, without deactivating an enzyme contained in the cereal; a method of controlling a molecular weight of the -glucan extracted from the cereal, by controlling an extraction time; a method of recovering the -glucan from an aqueous solution of the -glucan, comprising the freezing of the aqueous solution, the thawing thereof and the separating of a solid component from a resulting suspension; and the -glucan obtained by the methods. Gel is formed when the heated solution of the -glucan is cooled. The present invention discloses also the use of the -glucan as therapy of various diseases, an additive into cosmetics and foods, and a film forming agent; and discloses the cereals, from which the -glucan is extracted, for use as animal feeds or for use in brewing.
