Abstract:

PURPOSE: To bind raw meat effectively, by using white powdery ash obtained by burning eggshell at a specific temperature.

CONSTITUTION: Eggshell film is removed from eggshell, which is washed with water, granulated into powder, which is burned at 600W1,500°C until it becomes white, and the eggshell is granulated into powder. 0.1W2.0wt% based on raw meat of powdered ash is sprinkled on raw meat and uniformly applied to it, the meat is piled, shaped into a given meat mass, and this meat mass is allowed to stand at 5W15°C for 10W24hr while the pressure is applied to it. Consequently, bonding effect is exhibited.
