Abstract:

PURPOSE: To obtain the title food containing a water soluble fraction of egg york protein obtained by defatting an egg york and peptide, useful as health food or in prevention and treatment of bone joint disease, etc., and capable of improving absorption of calcium.

CONSTITUTION: An aqueous solution defatted by adding a defatting solvent such as n-hexane or ethanol to an egg york of hen's egg or duck's egg is desalted, preferably by electrodialysis to remove phosphorus and a calcium salt such as calcium chloride is added thereto instead of the phosphorus and the solution is concentrated and dried to provide a water soluble fraction of egg york protein and peptide. The fraction is added to drink, bread, etc., to provide the aimed food or the fraction is formed into a tablet so as to administer at a dose of 3000-7000 mg/adult in several portions/day to provide the aimed medicine or the fraction is mixed into a feed as a feed additive to provide the aimed feed. Furthermore, the water soluble fraction may be used as a hydrolyzate having 40000-2000 molecular weight by decomposing the fraction by a proteolytic enzyme.
