Abstract:
PURPOSE: To comparatively speedily cool just baked bread by generating the current of air for cooling through the inside of bread to the outside during the rotations of a carrousel. CONSTITUTION: The bread is moved from an oven or the like through a carry-in conveyer, batching conveyer and conditioning conveyer onto the carrousel. While the carrousel is rotated, the bread is held between a pair of members 7. On both the sides of each station of the carrousel, a lot of needles 14 are supported by needle frame members 13, the needles 14 are inserted from both the sides of bread on a rack 8 into the bread, and cold air is blown through the needles 14 into the bread. The rack of cooled bread is moved onto the conditioning conveyer and the bread is moved from the rack onto a carry-out conveyer one by one.
