Abstract:
PROBLEM TO BE SOLVED: To provide bread capable of being industrially produced, having an original shape and flavor of the bread, and also a rice cake like eat feeling i.e., a sticky eat feeling, a moist feeling, and a palatable taste.
SOLUTION: This bread uses at least (a) wheat flour, (b) an α-formed wheat flour and/or α-formed wheat starch and (c) an α-amilase as raw materials for producing the bread.
