Abstract:

PURPOSE: To provide the subject broiled snake or viper free from any malodor by immersing a snake or viper in a cooled water-containing ethanol to impregnate the surface of the snake or viper with the ethanol, removing at least one part of the ethanol and subsequently broiling the snake or viper.

CONSTITUTION: A snake or viper is roughly cut into pieces of approximately 1-10cm (preferably 2-7cm) and subsequently immersed in a cooled water- containing ethanol [preferably sake (a Japanese liquor) or a foreign liquor] having a concentration of 5-50% (preferably 10-30%) (preferably at an immersion temperature of 5-30°C) for 3-60min (preferably 5-30min) until the ethanol is impregnated into the surface of the snake or viper. The snake or viper is taken out and one part of the ethanol (the remaining rate of the ethanol is 10-40%) is removed by an evaporation method, etc., followed by broiling the treated snake or viper with a direct fire such as charcoal fire or gas fire to provide the objective broiled snake or viper.
