PURPOSE: To prepare a sanitary cupcake, in high productivity and low loss, by filling a heat-resistant cup partly with a pastry of sponge cake, baking the pastry, and filling the cup with a filling agent.

CONSTITUTION: A heat-resistant cup made of a plastic, etc. is partly filled with a fluid pastry of sponge cake, and baked to obtain a sponge cake occupying about 2/3 of the depth of the cup. The sponge cake is covered with a filling agent composed mainly of a dairy product or shortening. A large amount of cupcakes can be produced by this method, continuously, without necessitating or with little labors, at a low cost of the production apparatus.
