Abstract:

PURPOSE: To produce a cake of natural feeling by preparing batter base with a material to form cracks at the top surface induced by heat-swelling, dividing the batter base into a mold and baking the divided base with topping becoming semi-fluid by heat and forming a radial pattern.

CONSTITUTION: Batter base is prepared by compounding gelatinized potato starch and water with raw materials consisting of soft flour, sugar, baking powder and salt and kneading the mixture with a mixer provided with a whipper for 2min. The batter base is divided in a prescribed amount into a mold 1, e.g. aluminum cup. Topping 3, e.g. flour paste, custard cream, various kinds of jam, fruit sauce and chocolate, becoming semi-fluid by heat is placed on the top and the molded batter base with topping is subjected to heat-swelling treatment to form cracks 4 and a radial pattern of a part of topping 3. The objective cake of natural feeling is produced, having a topping made radial pattern on the heat swelling surface of the cake.
