Abstract:
To obtain a sponge cake-like food having quality of sponge cake and moistly good palatability at a low cost.
This sponge cake-like food having a specifically good palatability, well baked color, good color of a sponge dough and good taste is obtained by making a raw and water-containing dough of a sponge cake contain 2-60 dry wt.% of soy bean particles and substituting them for pulverized nuts in the raw material.
