To provide a carcass sterilizer equipped with nozzles which make hot water flow out in a curtain-fashion from slits, so as to ensure hot water to be poured on the whole surface of carcass, prevent the carcass from heat deterioration, and improve the energy-saving effect and economy, therefore useful in e.g. slaughtering and carcass dressing operations.

This carcass sterilizer is equipped with nozzles 7 functioning to pour hot water H on a suspended carcass M and disposed in two or more tiers vertically in parallel with the carcass M and also standing via the carcass M against each other, wherein the nozzles 7 make hot water flow out in a curtain-fashion from slits. This sterilizer also has pref. cooling nozzles 20 for pouring cold water on a suspended carcass, and it is preferable that the operation of this sterilizer is controlled as follows, the nozzles 7 are stopped for a given time at their uppermost positions and put hot water H on a carcass M and then put hot water H on the carcass M again while being allowed to descend, and then stop putting hot water H on the carcass at their lowermost positions; at the same time, cold water is sprinkled via the cooling nozzles 20 on the carcass M.
