Abstract:
To provide a cheese cake-like food product having high emulsion stability and having both of a body feeling and a good bite in the mouth and a method of producing the same.SOLUTION: A cheese cake-like food product of this invention includes at least cheese, an emulsifier, whey protein, and glucomannan, in which the emulsifier includes at least one type selected from a group consisting of diacetyl tartaric acid monoglyceride, succinic acid monoglyceride, and enzyme-decomposed lecithin. The whey protein is preferably at least one type selected from a group consisting of non-refined whey, whey protein concentrate, and whey protein separated matter.SELECTED DRAWING: None
