Abstract:

To obtain fryable cheese having heat-resistant shape-retaining properties, provide a method for producing the cheese and obtain a food containing the cheese.

This cheese is obtained by compounding cheese with a bovine serum protein. The bovine serum protein is a protein in bovine serum. Bovine serum albumin usually occupies about 40% of the bovine serum, and a bovine serum protein having 100% to about 40% bovine serum albumin content is contained in the bovine serum protein in this invention. AMP-701 bovine serum protein manufactured by AMPC corp. is conveniently suitably used as a commercial product.
