Abstract:
PURPOSE: Liquid such as liquor, fruit juice or liquid seasoning is included in cheese to improve the quality and storability and give a novel type of taste to cheese.
CONSTITUTION: Cheese is melted by heating and a liquid such as liquor, fruit juicd or liquid seasonings or a slurry such as a jam, honey, or cream is included in the melted cheese. Then, it is solidified by cooling. Or a solidified cheese layer is formed on the bottom of the mold, the frozen liquid or slurry is placed on it and the melted cheese is poured to cover it, then solidified by cooling.
