Abstract:

To provide cheese sauce having smoothness, excellent preservability at low-middle grade of fat and high starch level with reduced cheese, comprising an oil-in-water type emulsion containing cheese and uniformized modified starch, etc.

The objective cheese sauce comprising an oil-in-water type emulsion containing 1-25wt.% of cheese and 3-10wt.% of uniformized modified starch, each based on the weight of the whole cheese sauce, is obtained by uniformizing a mixture containing modified starch and ≤40wt.% of non-modified starch and blending the resultant uniformized starch with cheese and other component of the cheese sauce.
