PURPOSE: To obtain the subject reddish black CHIMAKI (rice-dumpling wrapped in bamboo leaves) expected to be useful as a healthy food, having good taste, characteristic flavor and high nutritive value by wrapping a material containing boiled black rice or steamed black rice with leaves of bamboo grass, bamboo or cogongrasses.

CONSTITUTION: For example, black rice (scientific name: Oliza sativa L.) is washed with water, immersed in water for 30 minutes to 6 hours, mixed with 50 to 120 pts.wt. based on 100 pts.wt. black rice of water and boiled similarly to glutinous rice. The boiled black rice is seasoned with salt, soy sauce, etc., blended with ≤60 pts.wt. (based on 100 pts.wt. black rice) one or more ingredients of pork, dried prawn, Lentinous edodes, soybean, bamboo shoot, etc., adjusted to a proper size, formed into triangular rice ball, wrapped with leaves of bamboo grass, etc., (previously exposed to hot water) and preferably boiled for 5 to 15 minutes to give the objective CHIMAKI.
