Abstract:

PURPOSE: To provide a combined food in which the difference of the textures of food components are emphasized.

CONSTITUTION: The combined food in which plural foods whose aqueous phases are continuous phases are combined in a state that the foods exist separately is characterized in that a hydrolyzed protein is added to a specific phase among the phases in a water concentration sufficient for increasing the transfer of water into the other phases, and the method for producing the combined food. The combined food having a texture different from those of conventional combined foods is obtained.
