Abstract:

PURPOSE: To obtain the subject composition, excellent in flavor and texture and useful for preventing adult diseases, etc., by treating whey with an ion exchange resin, using the resultant unadsorbed fraction as a principal ingredient, reducing lactose therefrom and using the resultant whey mineral.

CONSTITUTION: Whey such as cheese whey is treated with an ion exchange resin such as a cation exchange resin to provide an unadsorbed fraction, which is used as a principal ingredient. Lactose is subsequently reduced therefrom to afford whey mineral (with preferably 3-15% protein content in the whole solid substance), which is then used to provide the objective composition. Furthermore, the resultant whey mineral is preferably used together with a filtrate part prepared by ultrafiltering the adsorbed fraction or alkali metallic salts and/or alkaline earth metallic salts.
