Abstract:

PURPOSE: To provide a method capable of obtaining meat processed products excellent in a water holding property and a binding property and having elasticity and good eat feeling without using a phosphoric acid salt.
CONSTITUTION: This composition for an edible meat processing comprises (a) 100 pts.wt. at least one additive selected from starch, plant protein, gelatin, albumen, lactose and casein, (b) 10-60 pts.wt. (based on sodium carbonate) one carbonic acid salt selected from sodium carbonate, sodium hydrogencarbonate, potassium carbonate and potassium hydrogencarbonate, (c) 10-30 pts.wt. (based on ascorbic acid) one compound selected from ascorbic acid, sodium ascorbate and potassium ascorbate and (d) 1-20 pts.wt. (based on acetic acid) one compound selected from acetic acid, sodium acetate and potassium acetate.
