PURPOSE: To stably obtain the subject high concentration glyceride of docosahexaenoic acid by hydrolyzing fats and oils containing highly unsaturated long chain fatty acids using Candida rugosaderived lipase.
CONSTITUTION: To fats and oils such as bonito oil containing highly unsaturated long chain fatty acid (e.g. eicosapentaenoic acid), water is added in an amount of 1-200wt.% to obtain a fat and oil dispersion. To the resultant dispersion, Candida rugosaderived lipase is then added in an amount of 10-2000 units based on 1g fats and oils and the resultant mixture is reacted at 20-70°C for 1-48hrs. to obtain the reaction product solution. The acid value of the obtained reaction product solution is measured and the reaction is stopped at 50-150 acid value to obtain the reaction products. The reaction products are subsequently subjected to steam distillation, etc., and a glyceride fraction is separated, thus condensing and recovering the objective glyceride of docosahexaenoic acid.
