Abstract:

To prevent the occurrence of a failure or over-fermentation of dough caused by the steam which is produced at the time of making rice cakes by driving a cooling fan during kneading operation when the food to be kneaded is the rice cakes or control ling the drive of the cooling fan in accordance with a prescribed condition when the food is the dough.

Glutinous rice steamed by means of the range cooking function of the main body 1 of a cooking device or a steamer is put in a kneading container and the container is set up in the heating chamber 3 of the cooker. When rice cake making is selected, a controller operates the kneading container by driving a kneading motor 23 and the steamed glutinous rice is kneaded for making rice cakes. During the kneading operation, the wind produced by driving a cooling fan 14 by means of the controller is supplied to the chamber 3 through a supply opening 2a and discharged from an exhaust opening 2b through an exhaust duct 16. Since the steamed high-temperature glutinous rice is contained in the kneading container, a large quantity of steam is generated during the kneading operation, but the steam is discharged to the outside by the wind produced by operating the cooling fan 14. When dough kneading is selected, the necessity/nonnecessity of the operation and the operating time of the cooling fan 14 are decided from the detected temperature in the chamber 3 at the time of starting the kneading operation.
