Abstract:

PROBLEM TO BE SOLVED: To efficiently obtain high-quality custard cream free from so-called DAMA (a state in which egg yolk or soft flour is individually solidified), scorching, etc., in a short time.
SOLUTION: This cooking and stirring method of custard cream comprises setting a pan (12) in a gas kettle (11) comprising a non-heatstoring heat insulating material which is capable of readily heating, but readily cooling, facing a rotating blade (A) for preventing scorching and a wire beater (B) for solving DAMA revolving' while rotating the circumference of blade with the rotation to the interior of the pan and stirring raw materials (M) of custard cream housed in the pan by a rotating blade and a wire beater while cooking by direct fire. In the cooking and stirring method, revolving motion speed of a wire beater is relatively changed so as to be equivalent to rotating motion speed of a rotating blade or faster than that of the rotating blade in early stage at which raw materials during cooking and stirring start to boil down and to be slower than rotating motion speed of the rotating blade in final stage at which the raw materials start to boil down.
