Abstract:
PURPOSE: To provide the subject apparatus capable of efficiently cooling various kinds of creamy food materials such as custard cream and butter cream in an entirely homogeneous state in a short time.
CONSTITUTION: This apparatus is composed of a bowl-type pot 17 for placing a food material which is supported on an apparatus frame and whose upper part is open, and a rotating stirrer inserted into the pot through the upper opening from above the pot. The pot 17 is surrounded with a cooling jacket J and the food material M is cooled with a cooling medium flown into the cooling jacket J during the food material M is mixed by the stirrer.
