PURPOSE: To prepare the cyclodextrin clathrate compound of the titled acid, useful as a raw material of pharmaceuticals, foods, etc., by including the titled compound, its alkali metal salt and/or ester in cyclodextrin, thereby deodorizing and stabilizing te titled compound.
CONSTITUTION: At least one compound selected from eicosapentaenoic acid (EPA), docosahexaenoic acid (DHA), their alkali metal salts and esters is included in cyclodextrin to obtain a cyclodextrin clathrate compound containing the above compound in an amount of preferably 4W15wt%. EPA and DHA are present in the fish oil of a bluefish such as sardine, mackerel, etc. and have the activity to lower the cholesterol level in blood serum; however, it has ill odor, and is difficult to be stored or handled because of the instability originated from the double bonds. These problems can be solved by the above treatment.
