To provide decorating vegetables given with unconventional decorativeness, using color development of reddish purple of an unconventional color as decorating vegetables, and to provide a method for processing the decorating vegetables.

This method for processing the decorating vegetables comprises cutting root vegetables (A) with reddish purple to an appropriate shape, and drawing with citric acid an arbitrary shape and pattern on the cut surface. Alternatively, the method comprises cutting root vegetables (A) with reddish purple to an appropriate shape, and drawing with citric acid an arbitrary shape and pattern on the cut surface, and then rapidly freezing the vegetables followed by coating with thickening polysaccharide liquid to suppress progress of excessive discoloration.
