To provide a pyrroloquinoline quinone (PQQ)-dependent dehydrogenase which is excellent in heat resistance and can react with a plurality of saccharides as substrates, to provide a technique for producing the enzyme in a large amount by a genetic engineering method, comprising isolating a gene encoding the enzyme and obtaining the enzyme having the objective physicochemical properties as a recombinant, to provide a fuel battery using the characteristics of the enzyme, and to provide a saccharide sensor.
Provided is the protein having the following physicochemical properties (1) and (2): (1) the protein requires the pyrroloquinoline quinone as a coenzyme, and catalyzes a dehydration reaction for producing gluconolactone from glucose, and (2) the protein stably exhibits the activity at temperature of 60C, and has optimal temperature in 80-100C.
