Abstract:
PURPOSE: To obtain the title food having high preventing effects on dental carries and excellent safety, comprising an antibody containing specific bonding activity against dental caries-inducing bacteria.
CONSTITUTION: An antigen substance obtained by using preferably Streptococcus mutans is inoculated into a chicken species for egg production such as White Leghorn and an antibody (having ≥0.50 absorbance in 1μg antibody at 405nm) is obtained from a hen's egg having sufficient antibody value. A food ingredient such as ice cream, yogurt or wheat gluten is blended with 0.05wt.% of the antibody at pH ≥3.0 and sterilized at 60-70°C for 30 minutes or at 80°C within 1 minute to give the objective food.
