Abstract:

PURPOSE: To deodorize garlic without reduction in its microbicidal effect by salting the garlic, then dipping it into water and blowing bubbles to the garlic dipped in the water.

CONSTITUTION: Garlic is salted or dipped in a high concentration of saline for 2 to 3 months. Then, the garlic is dipped into water, and bubbles are blown to the garlic, as it is kept in the water for several to 24 hours to effect deodorization of the garlic.
