Abstract:
To provide a seasoning liquid easily suppressing animal meat odor without giving adverse influences to the original taste and appearance of animal meat, and to provide a method for suppressing animal meat odor.
This deodorizing seasoning liquid for animal meat contains 5-80% (w/v) of lemon fruit juice, 10-20% of ethanol (v/v), and alkaline salts (sodium hydrogencarbonate, sodium carbonate, potassium carbonate, or the like), and has pH8-9.5. It is possible to greatly reduce animal meat odor by thoroughly spraying the deodorizing seasoning liquid on animal meat, pouring it as evenly as possible thereinto, or rubbing for sufficient contact thereto, before cooking animal meat.
