PURPOSE: To determine the concentration of alcohol, rapidly and continuously, by passing a gas containing the volatile component of an acetic acid fermentation liquid through an absorption tube filled with an alkaline substance to effect the absorption of acetic acid, and introducing the gas into a gas sensor to detect the alcohol.
CONSTITUTION: An acetic acid fermentation liquid is introduced preferably into a water-repellent gas-permeable tube 4 in a hollow cell 5, and a carrier gas C is introduced into the hollow cell 5 to transfer the gas containing the volatile component of the fermentation liquid to the carrier gas C. The collected gas is passed through an absorption tube A (heated preferably at 100W200°C) filled with an alkaline substance to effect the absorption of acetic acid. The gas passed through the tube A is introduced into the gas sensor (preferably a semiconductor gas sensor) to detect alcohol, and the signal is transduced to an electric signal and amplified to display the alcohol concentration.
