Abstract:
PURPOSE: To form uniform, specific beltlike dough by cutting bread dough lump by a cutting blade of hair clipper type while holding the bottom of the dough in a hopper with belts having zero relative velocity against the bottom of the bread dough lump in the hopper.
CONSTITUTION: Bread dough lump 1 is cut by longitudinal movement of a frame 5 against a hopper 2 by a cutting blade 15 of hair clipper type while supporting the bottom of dough by belts 10 and 24 having zero relative velocity against the bottom of dough in a hopper. Cutting motion is carried out without applying convection action on the bread dough lump at all.
