Abstract:
PROBLEM TO BE SOLVED: To provide a food fiber highly containing starch excellent in processing resistance, i.e a food fiber highly containing starch low in reduction rate of food fiber content even under severe processing conditions such as heating and a simple manufacturing method of the food fiber highly containing starch.SOLUTION: There is provided a crosslinked starch containing a subsurface starch having gelatinization initiation temperature of 70°C or more as a raw material and having food fiber content of 90% or more and food fiber content of 55% after heating at 120°C for 1 hour in a solution with starch solid content of 30%.SELECTED DRAWING: Figure 1
