Abstract:

PURPOSE: To provide the titled composition with emulsion stability, by making the composition wherein the innermost phase fats and oils contain sorbitan fatty acid ester as an emulsifying agent, and a middle water phase contains sucrose fatty acid ester and polyglycerin fatty acid ester.

CONSTITUTION: The innermost phase fats and oils containing 0.01W1.5wt% based on the composition of sorbitan fatty acid ester as an emulsifying agent. The middle water phase containing 0.01W1.5wt% based on the composition of sucrose fatty acid ester having ≥2 HLB and 0.05W1wt% based on the composition of polyglycerin fatty acid ester. A total amount of the emulsifying agents is 0.07W4wt% based on the composition. A ratio of the innermost phase fats and oils to the middle water phase is 1:1W4, a ratio of the continuous phase of fats and oils to the O/W type emulsion consisting of the innermost phase fats and oils and the middle water phase is 1:0.2W1, the particle diameter of the innermost phase fats and oils is ≤2μ, and the particle diameter of the O/W emulsion of is 0.7μW10μ.
